Summer Soba with Tahini, Mint and Edamame

Ingredients

Tahini Sauce

½ cup tahini paste 

2 tbsp lemon juice 

1 tbsp tamari 

2 cloves garlic (optional) 

1 teaspoon sea salt 

½ cup mint leaves 

¾ cup water 

Blend all ingredients until smooth. 

 

Edamame

2 cups frozen and shelled edamame, blanched in 2 cups boiling water 

 

Buckwheat Soba

 1 package buckwheat soba cooked per package instructions. Run under cold water to prevent overcooking. 

Assembly

 Toss noodles with tahini sauce, and edamame. Serve warm or cold.  

Garnish with mint leaves and sesame seeds. Add more salt to taste. 

 Serves 4
