Summer Curry

4-5 cups of your favorite summer vegetables cut into 1-2 inch chunks 

Squash, Cauliflower, Broccoli, Radishes, Peas, Carrots, Corn etc. 

 

Lightly steam vegetables in your favorite steamer basket. Add a few pinches of salt if desired. 


Curry Sauce

½ cup almond butter

1 tbsp tamari

1 tbsp lime juice 

½ tbsp maple syrup (optional) 

2 tsp curry powder or paste 

½ tsp turmeric 

½ tsp chili flakes (optional)

1 cup water 

 

Blend all ingredients until smooth. 

Makes 1 ½ cups 

 

Assembly

 Serve steamed vegetables and rice, with a side of curry sauce. You can optionally toss everything together before serving as well. Garnish with sesame seeds and cilantro if you wish!
