Coconut Lime Rice with Cashews

Ingredients

1 cup basmati rice

1 12 oz can coconut milk 

½ cup water 

Juice of 1 lime + 1 tbsp lime zest 

½ teaspoon sea salt 

1 cup cashews, roughly chopped 

1 tbsp olive oil or melted coconut oil 

½ tsp sea salt 

1 tsp cumin powder 

1 tsp turmeric powder

Pinch of cayenne, optional

½ cup chopped cilantro (approximately half a bunch) 

1 tbsp lime juice 

 

Instructions

Rinse rice, and then add to a pot with coconut milk, water, lime juice, and sea salt. Bring to a boil. Reduce heat to simmer and cover to cook. Stir every few minutes until rice is cooked. Cook time is about 20-25 minutes.  

While the rice is cooking, chop cashews and mix with sea salt and spices. You can toast the nuts prior to tossing them with the spices if you prefer, or you can eat them raw. 

Once the rice is cooked, remove it from heat. Allow it to cool slightly before mixing with chopped cilantro and spiced cashews. 

This dish is delicious on its own or served with grilled fish or protein.
