Peas and Carrots Salad Hand Roll

Ingredients

1 lb carrots shaved in a food processor, this should yield about 3 cups

2 cups peas, fresh or frozen. If frozen, simply dethaw in hot water 

 

Dressing

¼ cup olive oil 

¼ cup lemon juice or rice vinegar

2 tbsp toasted sesame oil (optional) 

3 tbsp miso, preferably white

1 tbsp tamari 

1 tbsp grated ginger 

1 tbsp garlic, grated or minced (optional) 

¼ cup dulse flakes 

Sesame seeds (optional garnish) 

 

Handroll

Nori

Thinly slice cucumber 

Avocado 

Cilantro

Wasabi

Instructions

Whisk dressing ingredients together, and toss with peas and carrots. Then add dulse. Allow marinating for about 30 minutes before serving. 

This salad is great on its own and will keep in the refrigerator for up to 4 days. It is also great as a nori roll.*

*Using nori as a wrap, roll the about ¼ cup peas and carrots mixed with your favorite sushi roll ingredients. Serve and eat immediately.
