Chai Coconut Cookies

Ingredients

2 ½ cup coconut flakes

½ cup almond flour 

1 tsp ginger powder 

1 tsp cinnamon powder 

¼ tsp cloves

¼ tsp nutmeg

½ tsp sea salt 

3 tbsp local honey or maple syrup 

½ c cup coconut oil, melted 

2-4 drops liquid monk fruit sweetener (optional) 

½ cup coconut flakes for garnish (optional) 

Instructions

In a food processor, pulse coconut flakes and almond flour until well combined. You want the coconut flakes to have a flour-like texture.

Add spice and salt, and pulse to incorporate the spices.

Add honey or maple and coconut oil, and mix until everything is well combined- it should have the texture of dough. Be careful not to over-process or the dough will get too oily. This is why you add the coconut oil last. 

Remove dough from the food processor, and refrigerate for about 10-15 minutes just so the dough is firm enough to roll into balls. Using approximately 2 tbsp per serving, roll into balls. You can roll them in coconut flakes for an optional garnish.

Makes about 1.5 dozen
